Pumpkin Spice
Cake
1 cup of butter
1 cup of sugar
1 cup of brown sugar
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of ground ginger
1 cup of raisins
4 eggs
2 cups of pumpkin (1 pound)
2 teaspoons of cinnamon
2 3/4 cup of flour
1 teaspoon of salt
1/4 teaspoon of allspice
Cream butter and sugar together until smooth. Add eggs, beating
after each addition. Blend in pumpkin. Sift dry ingredients into
a smaller bowl and mix well. Add to pumpkin mixture. Add
raisins., Pour into two greased loaf pans and bake at 350ºF. for 1
hour. Cool and glaze.
Lemon Glaze:
1 1/2 cup of sifted confectioners' sugar
1 tablespoon of water
1 tablespoon of lemon juice
2 tablespoons of lemon rind
Combine all ingredients and mix until smooth. Pour over cooled
cakes. |
