Apple Spice Cake
2 1/4 cups of flour 1 teaspoon of baking soda 1 teaspoon of baking powder 1/4 teaspoon of salt 1/2 teaspoon of ginger 1 teaspoon of cinnamon 1/4 teaspoon of nutmeg 1/2 cup of sugar 1/4 cup of unsweetened applesauce 1 cup of sour milk or buttermilk 3 large Egg whites 1/2 teaspoon of vanilla 1/2 cup of raisins 2 Apples, pared, peeled & chopped |
| Combine flour, baking powder and soda, and salt. set aside. In another bowl, mix the applesauce, sugar and spices. Add milk, vanilla and egg whites. Mix well. Stir in flour mixture just until combined. stir in apples and raisins. pour into sprayed 7x11" pan and bake at 350ºF. for 25-30 minutes.

2 tablespoons of margarine, softened, plus 1 1/2 tablespoon, chilled 1/3 cup of sugar 2 Egg whites 1/3 cup of skim milk 1/3 cup of applesauce 1 1/4 teaspoons of cinnamon (divided use) 1 teaspoon of vanilla extract 1 1/3 Cups, of all purpose flour + plus 3 tablespoons, 2 teaspoons of baking powder 2 Golden delicious or 1 Granny Smith apples, peeled and cut into 1/4 inch slices 3 tablespoons of brown sugar
Preheat oven to 350ºF. Spray loaf pan with nonstick cooking spray and dust with flour. Cream 2 tablespoons softened margarine and sugar at medium speed of an electric mixer until light and fluffy. Add egg whites and beat at medium speed 2 minutes. Add milk. Combine 1 1/3 cups flour and baking powder, and add to creamed mixture, stirring just until moistened. Spread into prepared pan and arrange apple slices in single layer in 3 rows, pressing gently into batter. Cake will be small. In small bowl, combine 3 tablespoons flour, brown sugar, remaining cinnamon and chilled margarine. Mix until crumbly, and sprinkle over apples. Bake 45 minutes or until brown. Make 6 to 8 servings.
