Authentic Guacamole
1 ripe tomato
2 limes
2 - 3 ripe, small to medium avocados, or 1 - 2 large ones
1/4 - 1/2 onion, finely chopped
a pinch of ground cumin
a pinch of mild chili powder
1/2 - 1 green chiles, such as jalapeno or serrano, deseeded and chopped
finely
1 tablespoon of cilantro, chopped finely, plus extra for garnishing
salt, optional
tortilla chips, to serve (optional)
Skin the tomato; place in a bowl, cover with boiling water and let stand for
30 seconds. Drain and plunge the tomato in cold water. The skin will then
slide off easily. Cut in half, deseed, and chop the tomato flesh.
Squeeze the juice from the lines into a small bowl. Cut one avocado in half
around the pit. Twist apart, then remove the pit with a knife. carefully
peel off the skin, dice the flesh and toss in the bowl of lime juice to
prevent them from discoloring. Mash the avocados coarsely.
Add the onion, tomato, cumin, chili powder, chopped chiles, and chopped
cilantro to the mashed avocados. If the guacamole is to be used as a dip for
tortilla chips do not add salt. If it is to be used as a sauce, add salt to
taste.
To serve the Guacamole as a dip, transfer it to a serving dish, garnish with
the finely chopped cilantro, and serve it with tortilla chips for dipping.
