Indonesian Satay w/ Spicy Peanut Sauce
1/4 cup of lime juice 2 cloves garlic, minced 1 teaspoon of grated lime peel 1/2 teaspoon of ground ginger 1/2 teaspoon of ground red pepper 4 boneless skinless chicken breasts, about 2 pounds, cut into strips Spicy Peanut Sauce
Mix together the lime juice, garlic, peel, ginger and pepper; pour over chicken. Cover. Refrigerate for 1 hour. Drain. Prepare coals for grilling.
Thread chicken on individual skewers; place on a greased grill over hot coals.
Grill, uncovered, 3 to 5 minutes on each side or until tender. Serve with Spicy Peanut Sauce. Makes 15 servings
Spicy Peanut sauce
one 8 ounce package of cream cheese, cubed 1/2 cup of milk 3 tablespoons of peanut butter 2 tablespoons of firmly packed brown sugar 1/2 teaspoon of ground cardamom 1/8 teaspoon of ground red pepper
Stir ingredients in small saucepan over low heat until smooth.
