| Spicy Cranberry Orange Mold
1 bag fresh cranberries 2 small packages or 1 large package of orange or lemon flavor gelatin 1 1/2 cup of boiling water 1 cup of cold water* 1/4 teaspoon of salt (optional) 1 tablespoon of lemon juice 1/4 teaspoon of cinnamon 1/8 teaspoon of cloves 1 orange, sectioned & diced 1/2 cup of chopped walnuts, almonds or celery |
| Finely chop cranberries in food processor; mix with sugar and set aside. Dissolve gelatin and salt in boiling water. Add cold water, lemon juice, cinnamon and cloves. Chill until thickened. Fold in the cranberries, orange and nuts. Spoon into 5 cup mold which has been sprayed with no stick cooking spray. Chill until firm (about 4 hours). Unmold. *Or use 1 can whole berry cranberry sauce omitting sugar and reduce cold water to 1/2 cup.
