Spicy Cornbread
3/4 cup of yellow cornmeal
1 1/4 cups of all purpose flour
1/4 cup of granulated sugar
1/2 teaspoon of salt
1 tablespoon of baking powder
1/2 teaspoon of red pepper (cayenne)
a dash of garlic powder
1 egg, beaten or egg substitute
3/4 cup of milk
1/4 cup of cooking oil
1 tablespoons of minced onion
2 tablespoons of green pepper, minced
2 tablespoons of pimiento, minced
Combine the dry ingredients in a large bowl and mix well with slotted spoon.
Combine remaining ingredients and stir lightly into first mixture. Bake in 8
inch heavy, preheated dish (cast iron or thick pottery) containing 2
tablespoons of cooking oil or shortening. Bake in preheated 425ºF. oven for
20 - 25 minutes. Preheating dish or pan produced brown, crusty bread. Serves
