Spicy Tomato Soup
30 ounces of stewed tomatoes
5 ounces of tofu, sliced
3 cups of coconut milk
1 tablespoon of red curry paste
2 tablespoons of soy sauce
1 tablespoon of lemon juice
GARNISH
2 tablespoons of cilantro leaves, chopped
Puree the tomatoes. Set aside. Puree the tofu & the coconut milk. Mix all
the ingredients together in a soup pot. Bring to a boil, lower heat & simmer
for 10 minutes. Garnish with cilantro.
