Spicy Tomatoes

3 small green or red hot chile peppers seeded, minced
1 cup of chopped seeded tomato - (1 medium)
3 tablespoons of  fresh lime juice
1 teaspoon of salt
1 teaspoon of cayenne pepper
2 medium shallots minced
2 teaspoons of soy sauce

In medium bowl, combine all ingredients and mix well. Let stand 10 minutes before serving. Tomatoes will keep up to 3 days, refrigerated, in covered container.

This recipe yields about 1 cup.
