Mushroom Stuffing
1/3 cup of butter or margarine
1 cup of sliced mushrooms
1/2 cup of chopped celery
1/3 cup of chopped onion
one 10 3/4 ounce can of condensed chicken broth
one 8 ounce package of herb seasoned stuffing mix
1 egg, slightly beaten
2 tablespoons of chopped parsley
In a 10 inch skillet over medium high heat, in hot butter, cook
mushrooms, celery and onion until tender, stirring occasionally. Add
chicken broth; heat to boiling. Remove from heat.
Stir in stuffing mix, egg, parsley. Use to stuff chicken, turkey or
capon. Yield: 4 cups
Baked Mushroom squares: Prepare as above but spoon into butted 8x 8 inch
baking dish. Bake at 350ºF. for 20 minutes or until hot and set. Cut
into squares to serve. |
