| Szechwan Pork Picnic Style in Lettuce Leaves
4 lean pork chops sliced 1 inch thick boiling water 2 fresh red chili peppers or jalapeno peppers, seeded and finely minced or 1/2 teaspoon of dried red pepper flakes 2 cups of cooked thin noodles 1 cup of mixed fresh mint or basil leaves 12 large lettuce leaves Szechwan Sauce: 4 1/2 tablespoons of white vinegar 4 1/2 tablespoons of light soy sauce 4 to 5 small garlic cloves, minced 3 1/2 tablespoons of sesame oil a dash of sugar salt red chili oil, optional
Remove pork from bones. Cut meat into very thin slices. Cook in boiling water until done, about 6 minutes. Drain well. Set aside to cool. for the sauce: Combine all ingredients in small bowl and blend well. Add pork to sauce and toss lightly. Cover and marinate about 30 minutes. Stir in chilies or pepper flakes. To serve, place small amounts of noodles, pork, mint and basil leaves in each lettuce leaf and fold to enclose. Use additional sauce for dipping if desired. 4 servings |
