Thanksgiving Cake 1

1 box of spice cake mix
1 can of  canned pumpkin
1/2 cup of  vegetable oil
1 package of vanilla instant pudding mix
3 eggs
1 teaspoon of cinnamon
1/2 cup of water
1/2 cup of  pecans, chopped

Put all but pecans in a mixing bowl. Mix at medium speed for 5 minutes. Add pecans last. Grease a Bundt pan well with margarine. Sprinkle with flour. Pour in batter and bake at 350ºF.  for 40-45 minutes. Let cool in pan for 10-15 minutes. Serve with Cool Whip.

Thanksgiving Cake 2

2 cups of  flour
2 cups of sugar
1 teaspoon of cinnamon
1 teaspoon of ground cloves
1/2 teaspoon of nutmeg
1 teaspoon of salt
1 teaspoon of soda
1 cup of Wesson oil
1 cup of buttermilk
3 eggs
1 cup of strawberry preserves
1/2 cup of  chopped nuts

Mix together all ingredients except preserves and pecans. Cream sugar, spices, and Wesson oil and eggs. Add flour, salt, and soda alternately with buttermilk. Mix well. Add preserves and nuts. Bake in greased and floured bundt pan at 350ºF.  for 1 hour or until cake tests done. Cook cake upright for 20-25 minutes before turning over on cake plate.
