| Vegetarian Tamale Filling
2 cups of Sharp cheddar cheese 2 cups of Shredded Swiss or white Cheddar cheese 2/3 cup of Chopped black olives 2/3 cup of Chopped pine nuts 2 Onions, chopped 8 cloves Garlic 2 tablespoons of dried oregano 2 teaspoons of Ground cumin 1 can of Whole kernel corn, drained two 4 ounce cans of green chilies, chopped 2 teaspoons of Olive oil |

Use the food processor (if you can) to grate the cheese. Also, I chopped the onions and the garlic in the food processor. Combine all ingredients in a large bowl.
