| Low Fat Pineapple Sherbet (high Fiber)(6 Pts)
6 cups of boiling water 1 large can of crushed pineapple, 2-1/4 cups 1/2 cup of lemon juice 3 cups of sugar 3 egg whites |
| Pour boiling water over pineapple; add juice of lemons and sugar. Stir until well combined. Freeze until mushy in ice cube trays or a metal bowl. Beat egg whites until stiff; whisk into pineapple mixture. Freeze. Makes 8 servings
