| Waldorf Salad (2 pts)
2 cups of apples, chopped (2 medium) 1 1/2 teaspoons of lemon juice 1/4 cup of raisins 2 tablespoons of grapes, seedless, green, 2 tablespoons of sliced celery 1/4 cup of fat-free mayonnaise or salad dressing 1/4 cup of fat-free yogurt; plain Lettuce leaves 1 tablespoon of pecans or walnuts chopped |

Toss together chopped apple and lemon juice in a medium mixing bowl. Stir in raisins or snipped dates, grapes and celery. For dressing, stir together mayonnaise or salad dressing and yogurt in a small mixing bowl. Fold dressing into apple mixture. Cover and chill for 2 to 24 hours. To serve, arrange lettuce leaves on four salad plates. Spoon salad mixture onto lettuce-line plates. Sprinkle with chopped nuts. Makes 4 servings.
